The weather is starting to turn warm here and Maryland and I have been looking for some new refreshing side dishes in this Asian cucumber salad was exactly what I wanted. I had some extra cucumbers in the refrigerator and was looking through some great recipes on my Pinterest. I can’t wait until our cucumbers come in in the summer and I will use those from our garden. This is a great way to use up any extra cucumbers from your garden during the summer months that you are looking for a great salad to try out.
This time I use some mini English cucumbers that we’re going to go bad but I usually used to medium to large size pickling cucumbers and they work just as well. I try to keep cucumbers on hand for a quick and easy great appetizer and this time I bought too many!
Renee you left the skin on the cucumber slices?
I prefer to leave the skin on but you can take it off if that is your preference. I was in the mood for some chips so the skin really helped me with the extra crunch that I was looking for. Don’t forget the cucumber skin has a lot of nutrients and antioxidants that your body loves.
Just a sidenote if you are thinking about making this ahead of time and storing it for meal prep for the next day.
For best results I found that if I make this ahead of time and stored in a meal prep container it gets kind of soupy so prep your cucumber carrots and onion and a separate bowl. Place all of your wet ingredients into another small airtight container or small bowl with a lid for next time.
Ingredients
Grab a sharp knife!
Salad ingredients
Three fresh cucumbers medium to large size
One large carrot grated or chopped finely
1/3 cup of chopped red onion
Simple dressing
One and a half teaspoons of ginger
1 teaspoon of toasted sesame oil
Half of a teaspoon of fish sauce
2 tablespoons coconut amino’s or soy sauce if you don’t have dietary concerns
2 drizzles of chili oil or 1 tbsp of chili sauce
1/2 tbsp of white wine vinegar
OPTIONAL: If you like a lot of heat add some chili flakes
A sprinkle of black or white sesame seeds
How to make this zesty Asian cucumber salad
Place the medium cucumbers, onions and carrots in a mixing bowl and then add the remaining ingredients at the end. Mix well and top off with the spices for your bit of heat that you desire. Always add them a little at a time so you don’t go over board.
