OK, it’s Saturday and people are already asking ” What do I do with ALLLLLL of these Thanksgiving turkey leftovers?!!” Well, here’s a little idea to use up some of that yummy turkey. Enjoy these turkey rollups!
This year my husband put our second turkey into the smoker and ERHHMAGERD it’s to die for. I had some avocado left-over from Thanksgiving morning breakfast and if your kids are like mine they WON’T eat brown avocado. Well guess what? If it’s mixed in with everything you can’t tell it was brown LOL. Our chickens are still laying eggs so it’s always good to throw in an egg or 2 to any meal for us. If eggs aren’t your thing you can always omit the egg and do extra avocado. Have you ever tried this mustard before? I love it on every sandwhich I make . Southwest Turkey Roll Up
Equipment
- Food processor
- Knife
Ingredients
- 1 small Avocado
- 1 Hard boiled egg
- 1 tbsp Olive Oil Mayo
- 1 tbsp Koops Arizona Heat Mustard
- Salt to taste
- Pepper to taste
- Perfect Pinch Southwest Seasoning to taste
- 2 Tortillas
- 6 oz Smoked Turkey
- 2 slices tomato
Instructions
- Lay all of the ingredients out on the counter. Boil your egg in a small pot while you gather your ingredients for the food processor. Place the avocado, salt, pepper, Southwest Seasoning, mayo and mustard in the food processor while you wait for the hard boiled egg to be done. Cool down your egg and while you wait, warm up your tortillas. Place the tortillas on a plate and peel your egg and add it to the food processor with the rest of the prepped ingredients. Place your turkey onto the warmed tortillas, spread the combined avocado mixture onto the tortilla and add some tomato. ENJOY!
