I have to admit, I’m not a huge salad dressing lover but today I wanted something to give my salad a little extra kick. Since I’ve been dairy free I’ve been struggling to find dressings and sauces without dairy so I decided to whip up some myself ! I also pan fried some pot stickers to get a little extra calories for the baby and they went well with the salad.
I started my salad off with a spring salad base, you can certainly use kale or romaine but this is what I had at home so I went with it. Next I boiled a fresh beet and cut it up and put it next to the salad. I don’t put it on top right away because the juices from the beets make the salad a little more *wet* than I like it … I know , I know LOL. You can use canned beets and I’m sure the taste would be ok BTW.
Now here’s where I would do things differently….. the peach , it should have been grilled ! That would be a nice little touch to this recipe so maybe I’ll remember to do it next time! Next I whipped up some fresh, dairy free dressing. Here’s what I used :
2 tablespoons of blueberry honey sipping vinegar
3 tablespoons of EVOO
1 tablespoon of organic honey
Cilantro
Juice from one half of a lime
1 garlic clove
A pinch of salt and pepper to taste
That’s it guys ! Super simple and very complementary to the peach and beet. I know it sounds crazy but it worked !
